Over to the east, in the Rhône valley, they fabricate pasta in the form of packets of miniature ravioli, which they call ravioles. These are simply stuffed with herbs and local cheese. They have spread to the South-West where they can be found in good supermarkets and épiceries. Our version makes use of home-grown tarragon, which gives a delicious flavour to the sauce.
