Staying for a moment in Lalbenque, the local Office du Tourisme supplied us with a recipe for a delicious bonne bouche featuring, of course, the local truffle.

Ingredients

  • 4 truffles about 15 g (minimum) each
  • 350 g puff pastry

Method

Preheat the oven to 220C/425F/gas mark 7.

Wash the truffles in running water, using a very soft nail brush to remove any earth clinging to them. Pat them dry.
