People in the South-West have generally been shy about exotic spices. Indian food is not, for example, generally to their taste, perhaps because, as a nation, France had only a tiny foothold historically in that country. Nevertheless, with the gradual internationalization of taste, and the preference of the younger generation for spicier food, chicken has not escaped being jazzed up in a mild sort of way.
