Duck also lends itself to mild spicing, as in the following recipe for a tagine. Tagines are quite commonly found in the larger cities of the South-West, where the immigrant population in particular like to revive memories of home. The quantities are given for 2 people, because not many have a true Moroccan tagine big enough for four. For four people just double up the quantities and cook in a wide cocotte with a tight-fitting lid.
