Quiches are found all over France and are a popular standby, particularly as a snack meal for the young. Made with smoked salmon, they become something rather special. You do not need the expensive cuts of the fish; the trimmings will do just as well.

Ingredients

For a 25-28 cm flan case

  • butter for greasing
  • 500 g good quality store-bought puff pastry
  • 18 g sm

Method

Preheat the oven to 220C/425F/gas mark 7.

Roll out the pastry and use it to line the buttered flan case. Cut up the salmon into small pieces. Beat the eggs and blend in the cream. Season, being careful with the salt. Mix in the salmon pieces and pour into the pastry case.
