Veal cheeks can be just as tasty as those of their parents but, being younger and less full-blooded, they do not require such a robust preparation. The wine is white, not red, and it would be wrong to offer a youngster Armagnac. Joues de veau are difficult to find commercially but you may be lucky at your local butcher, or he may be able to order them for you. Another possible source is the local country market, where a farmer-producer may have some already packed for sale.
