Sometimes it is difficult to find lamb’s kidneys for sale in more than just one or two at a time. If you can find more, this is a quick and easy way of preparing them.
Heat the butter in a heavy-based pan, add the shallot and mushrooms and cook gently, stirring, for 5 minutes.
Raise the heat a bit and, in the centre of the pan, sear the open side of the kidneys. Turn them, season and allow to simmer slowly for 8 minutes.
