The same family of ingredients can be used in quite a different way to make a savoury gratin.
Cut the aubergines into 1 cm slices, sprinkle with salt and leave to drain for 1 hour. Pat the slices dry with kitchen paper. Coat the bottom of a frying-pan with olive oil and fry the aubergine slices until golden. Add the tomatoes and garlic, season with salt and pepper and leave to simmer gently for 20 minutes, stirring from time to time.
