Other tians contain eggs, which give a more creamy texture to the finished dish.

Some combine courgettes with potatoes (another seasonal marriage), or cheese and anchovy fillets. It rather depends on what you have handy. This one is based on courgettes and tomatoes, invariably in full season together.

Ingredients

  • 750 g courgettes, cut into 1 cm cubes
  • olive oil
  • ½ onion, chopped
  • 375

Method

Preheat the oven to 190C/375F/gas mark 5.

Put the cubed courgettes in a dry frying pan (use one with a lid), salt well and cook uncovered over a low heat until the juices run. Add a little oil, cover with the lid and cook until soft.

Heat more oil in another pan, soften
