More often than not, the tomato is served in salads, sometimes mixed with other summer vegetables.

Ingredients

  • 3 medium-sized courgettes, sliced
  • a few spring onions or 1 large shallot, sliced thinly

Method

Slice the courgettes and spring onions (or shallot) and steam them for 5 minutes.

Mix together the ingredients for the vinaigrette and use to dress the courgettes while they are still hot, adding the tomatoes. Toss well and leave to drain.

Dress with a little more olive oil. If you like you can add some steamed fennel or haricots verts.
