At the end of the season most people will be left with a lot of unripe tomatoes. A dear friend and neighbour suggests this way of dealing with them.
Cut the tomatoes into four or six wedges and put them in a plastic bag with the salt and vinegar. Shake them gently around in the bag and leave to rest for at least half an hour.
Pour off all the liquor, then dress the tomatoes with oil and chopped herbs.
