Fruit tarts are one way round this problem, and can be either made at home or bought at the nearest boulangerie. Avoiding for the moment the inevitable chocolate, here is a simple summer fruit tart.

Ingredients

For the pastry

Pâte sablée

  • 125 g butter, softened
  • 50 g icing sugar

Method

Preheat the oven to 200C/400F/gas mark 6.

To make the pâte sablée, cream together the butter and sugar until smooth and light in colour. Gradually add the egg yolk and then the water, mixing in a little at a time, and finally add the flour and combine into a smooth dough
