Ices do not, of course, have to contain cream at all. Restaurants will often offer you a variety of fruit flavours, either in the form of ice cream or as sorbets. But not many will propose this unusual sorbet de luxe. Elsewhere made with Chablis and best Cognac brandy, it is hardly less good when made with a good local dry white wine and some basic Armagnac.
