The strong red wine from Cahors features in a local apéritif, which we have not seen outside the region except in Toulouse (where you can find anything). One glass is generally enough, two glasses for the bold. The drink is named after the historically famous archbishop who studied theology at the university of Cahors in 1677 before taking up a bishopric at Sarlat. It is popular for the way it balances the slight bitterness of the walnut with the sweetness of the blackcurrant.
