This makes a strong white Dijon-style mustard.

Ingredients

  • cups white grape juice, preferably fresh
  • 1 cup dry white wine

Method

In a saucepan over medium heat reduce together by two thirds 1 cup of the grape juice, the white wine, vinegar, salt, pepper, and chopped shallots. In another small pot bring the remaining grape juice to a boil and simmer for 5 minutes. Set the latter aside.
