Now that the discovery of the effects of cholesterol has ruined our happiness in eating eggs with abandon, it is essential that we insist on enjoying a dish of them once in a while. This is for Christmas morning and in memory of all those lovely times reading Dr. Seuss’s Scrambled Eggs Super! to my children and looking forward to doing the same with my grandchildren. Use Oregon truffles which can be found all through the winter at reasonable prices.
