This omelette is inspired by the great breakfast fare I sampled at the Beverly Hills Hotel on my first visit there ... too many years ago.

Ingredients

  • 3 tablespoons crème fraîche
  • 3 slices Nova Scotia salmon, coarsely chopped

Method

Mix the crème fraîche, chopped salmon, and caviar together; these three ingredients should not cook. Season the mixture with pepper to your taste.

Beat the eggs with a small dash of salt. Heat the chosen fat in a 9-inch omelette pan over medium-high heat and pour in the eggs. Shake the mixture until it has curdled as instructed and spread th
