This was the treat of my young days, prepared with love by my dear mother, and because she had made this dessert for me, I made it many times for my children. With it came a compote of fresh fruit or homemade shortbread.
Scald the milk in a saucepan; scrape the tiny seeds of the vanilla bean into the milk and add the pod; let steep off the heat for 45 minutes. Strain through a conical strainer, add the sugar and salt, and reheat to scalding.
