You can proceed as described here using either olive oil, or the lightened butter. Good for grilled chicken legs, thighs, and breasts, to spread on bread served with fish chowders, and to add to pasta dishes and soups. It is not firm enough to cut, but rather should be spooned onto whichever offering you choose.
