This chowchow is good with grilled and poached turkey breast, poached whole chicken and chicken breasts, and grilled rabbit, as well as roast pork and rice dishes.

Ingredients

  • 3 pounds green tomatoes, sliced ⅓ inch thick
  • Salt
  • ¼ teaspoon ground cloves

Method

Place the tomato slices on a large stainless steel rack placed over a jelly-roll or sheet pan. Salt on one side only and let stand for 2 hours.

In a large stainless steel saucepan mix together the tomatoes, cloves, cinnamon, chiles, onion, vinegar, and brown sugar. Bring to a boil, then reduce the heat to medium-low and simmer until thickened and compotelike. If the mixture is too dry,
