The French chef who had the great idea of oven drying tomatoes did a great service to all cooks and chefs who cannot obtain sun-ripened tomatoes. This pickle is excellent on all poached and grilled fish and tossed through hot macaroni just before serving to replace butter or oil dressings. When used on pasta, do not let the pasta stand once the relish has been added or the vinegar will penetrate the pasta and give it the most unpleasant sour-bitter taste.
