Ingredients

  • 1 medium-size white onion, diced into ⅛-inch cubes
  • Salt
  • ½ cup packed washed and dried fresh mint leaves

Method

Spread the chopped onion on a plate and sprinkle with salt. Let stand 30 minutes, then drain into a conical strainer.

Mix the onion, mint, pepper flakes, garlic, water, and vinegars together well. Let stand 15 minutes, then if needed add more salt and a pinch of sugar and/or lemon juice if needed. Serve within the next 15 minutes.
