I owe this idea of citrus and jícama salsa to Elizabeth Lambert Ortiz, and I enjoy it so much that I have prepared multiple variations on it. Try all kinds of oranges and tangerines and you will find a different variation of taste every time. This is excellent with cold shrimp, cold pâté of scallops, grilled shrimp, etc.
