This salsa was born on a day when half a bowl of the above salsa was mixed with leftovers of avocado, black beans, and corn salad and ended up on plates side by side with great hamburgers.

Ingredients

  • 1 large, ripe Haas avocado, peeled, pitted, and diced into ¼-inch cubes
  • 1 tablespoon fresh lime juice
  • 1 rec

Method

Toss the avocado with the lime juice. Add it to the salsa, then add the black beans and corn. Keep chilled 15 to 20 minutes, then salt lightly. Serve with hamburgers on the same day as prepared.
