The garlic can, if you prefer, be omitted from the dressing and rubbed against the sides of the bowl. The taste of the salad will be more subtle. To be used with crackling Romaine.

Ingredients

  • 3 tablespoons fresh lemon juice
  • Salt
  • Pepper from the mill
  • ½ cup plus

Method

Mix the lemon juice, salt, and pepper well to start dissolving the salt. Whisk in the oil until the dressing turns completely opaque. Toss in the garlic and mint. Use within 15 minutes after reemulsifying well.
