Peas remain a problem; they are still not to be found tiny and delicious in their pods, which is just as well, since when they were years ago, we always ended up eating half of them uncooked, so never enough of them were left for dinner. Good by themselves or with roast chicken.

Ingredients

  • 2 pounds sweet peas in shells
  • 4 cups water
  • 3 thick fr

Method

Shell the peas. Bring the water to a boil, add the mint stems, and season with salt to taste and pepper. Simmer 10 minutes, then remove the mint stems, add the peas, and cook until just tender and still bright green, 4 to 5 minutes. Drain and immediately toss with the butter, sugar, more salt and pepper if needed, and the chopped mint leaves. Serve immediately while so very nice and fresh.
