The hot pepper flakes will give a bit of “zing” to that very discreet white sauce. Especially good served as a vegetarian dish in combination with a pilaf of orzo.
Trim the cauliflower into florets and peel the stems so they can cook as fast as the florets. While you do so, bring 3 inches of water to a boil in the bottom of a steamer. Add the onion, garlic, thyme, and bay leaf and let boil 10 minutes. Place the cauliflower in the steaming basket, cover, and steam until crisptender, 6 to 8 minutes.
