This Alsatian dish is quite delicious. It is best served with smoked pork chops. You will need to keep the turnips in a cool basement or refrigerator to be successful with the souring.
Peel the rutabagas, then cut them into inch-thick slices- Pile the slices on top of one another and cut into ⅙-inch-wide matchsticks. Put those in a glass bowl. Mix with the salt, kneading and mixing with your hands until the juices of the turnips start running out of the pulp.
