This is an Italian specialty to be found all along the Riviera dei Fiori, on the eastern side of the Gulf of Genoa, and in many other regions. The oil bath must be fresh and never have been used before. In the last step of the recipe, keep your face away. The mixture of vinegar and oil may splatter—you are responsible for your own safety.
