Cut the peppers open lengthwise. Remove the seeds and the foamy cellulose tissues which line their flesh. Cut the peppers into 1-inch-wide strips. Mix the flour with the salt. Put the flour and pepper strips in a bag and shake well; it will coat the side of the peppers that is slightly moist.
Meanwhile heat 3 inches of oil to 350°F. Deep-fry 4 or 5 pepper strips at a time until tender,
