  • Vegetable oil of your choice
  • 3 celery ribs, cut into ¼-inch-thick slices on a slant
  • 1 large zucchini, halved, then cut into ¼-inch-thick half moons

Method

Heat the wok or pan very well over high heat. Drizzle in just as much oil as needed to cover the sides and bottom of it. When the oil is hot, add the celery and stir-fry 30 seconds; add the zucchini and stir-fry another 45 seconds. Add the bok choy, stir-fry another 30 seconds, and finally add the cucumber and stir-fry another minute. Season with salt, add the walnuts and stir to mix. Empty int
