Ingredients

  • Virgin olive oil as needed
  • 2 garlic cloves, crushed in their peel
  • 1 cup sliced fresh water chestnuts or canned if unavailable

Method

Heat the wok or skillet very well over high heat. Drizzle in as much oil as needed to just cover the bottom and sides of it. When the oil is hot, add the garlic cloves and stir them until the smell develops grandly. Remove the cloves, add the water chestnuts, and stir-fry 1 minute. Add the snow peas, stir-fry 30 seconds, then the tomatoes and stir-fry 1 minute more. Remove from the heat, season
