Ingredients

  • 2 medium-size eggplants
  • Salt
  • unsaturated oil of your choice for deep-frying
  • ½ cup

Method

Peel the eggplants and cut them into ⅓-inch-thick slices. Sprinkle with salt and let stand in a colander for 1 hour.

Preheat 3 inches of oil to 370°F. Drain off any water extracted from the eggplant by the salt; rinse, pat completely dry, and dredge in the flour. Dip into the b
