  • 1 pound medium-size button mushrooms
  • 2 tablespoons fresh lemon juice
  • Salt

Method

Remove the stems from the mushrooms; they can be used in a soup or to prepare duxelles. Marinate the caps in the lemon juice with a little salt and pepper for 15 minutes. Preheat 3 inches of oil to 370°F.
