  • 4 large Maine, Yukon Gold, Yellow Finnish, or California White Rose potatoes
  • Salt

Method

Preheat 3 inches of oil to 370°F.

Meanwhile, peel the potatoes and cut them into sticks inch wide. Wash the sticks in 3 successive rinses of water, until no trace of starch is visibl
