Method

These directions are for both white and sweet potatoes.

Use four large potatoes and prepare them as for french fries (see preceding recipe) but cutting them into only ⅙-inch-wide matchsticks. Measure 4 cups of straws. Immerse the potatoes 2 cups at a time in oil preheated to:

  • 370°F for white potatoes
