Ingredients

  • 2 tablespoons virgin or pure olive oil
  • 4 small zucchini, cut into 1-inch chunks
  • 12

Method

Preheat the oven to 375°F. Heat the olive oil in a skillet, then add the zucchini pieces and brown them over medium-high heat until deep golden on all sides. Empty into an ovenproof dish and add both tomatoes, rosemary, and garlic. Toss together well. <
