This is a center of the plate dish. To make this vegetarian, replace the chicken meat with slivers of tofu ½ x 1½ x ¼ inch, colored in hot oil for better appearance.
Clean and crisp the Romaine leaves. Arrange on the bottom of a round country platter. Spread the cooked cracked wheat over the Romaine. Mix together the zucchini and nectarine slices and chicken slivers. Pile the mixture over the wheat. Sprinkle generously with the scallions.
