Bean Ragout on Semolina Cakes

This recipe is to be considered full fat for heart patients because of the Pecorino cheese. Although home-cooked beans will always be superior, you can use canned beans if you like.

Ingredients

For the cakes

  • Melted unsalted butter or unsaturated oil of your choice as needed
  • 3 cups milk of your choice
  • ¾ cup

Method

Using a brush, butter or oil very lightly a (preferably) nonstick 13 x 9-inch jelly-roll pan.

Bring 1½ cups of the milk to a boil in a 2-quart enameled cast-iron pot. Turn the milk down to a simmer. Dilute the semolina with the remaining cold milk and, stirring constantly, add the mixture to the simmering milk. Bring to a boil and continue stirring until the gruel has boiled and thicken
