The hush puppies of southern fishermen. These are best for a snack or an appetizer at a barbecue. Made first, not for my own kiddies, but for two little French squirmers I was babysitting. The cornmeal fritters took care of the problem.

Ingredients

  • cups cornmeal
  • cup sifted unbleached all-purpose flour

Method

Mix together the dry ingredients and lemon rind in a medium-size bowl. Beat the egg yolk together with the milk. Stir this into the cornmeal mixture until smooth. In another bowl, beat the egg whites until they can carry the weight of a raw egg in its shell without sinking by more than 14 inch. Fold into the batter, overfolding slightly.
