Do not use more fat in the cooking of the greens; it would interfere with the proper texture of the pasta dough. Ardi Gazna is a Basque country cheese made entirely with ewes’ milk.

Ingredients

For the pasta

  • 2 teaspoons confit fat or walnut or corn oil
  • 2 cloves garlic, finely chop

Method

To prepare the pasta, heat the chosen fat or oil in a large skillet over medium-high heat, then add the garlic and brown well. Add the leeks and greens, season with salt and pepper, and toss together well. Turn the heat down to low, cover, and cook until all the water has come out of the greens. Remove the lid and continue cooking until the mixture is completely dry. Cool completely.
