Macaroni dough is a pasta dough made without the slightest trace of egg, which makes it perfect for those engaged in a steady battle with the cholesterol in eggs. Because our American flour is somewhat stronger than the southern Italian flour, I use a little less semolina than the recommended ratio of two parts flour to one part semolina which is traditional in the Italian Puglia.
