Purchase the skate in ready-cut portions; this is the easiest way to handle a fish which is otherwise awkward. Varying with the size of the skate, wings come generally 1 to 1½ inches thick. The fish fibers are long and lean and overcooking is to be avoided at all costs. This dish must be served warm and the poacher is the most practical implement for cooking.
