This recipe happened in my wintry New England kitchen after I came back from sunny Queensland, Australia, in a raging snowstorm.
Toss the macadamia nuts in the butter over medium-high heat; do not let them color too much. Strain through a tea strainer to drip most of the butter into a small bowl you will reuse to fry the fish.
Mix the nuts, mango, salt and pepper to your taste, passion fruit juice and seeds, and lemon juice together and set aside.
