Ingredients

  • 3 cloves garlic, well mashed
  • ½ teaspoon harissa or to taste

Method

Add the garlic, harissa, paprika, and cilantro to the mayonnaise. Mix well and let stand 15 minutes to blend the flavors.

Heat 2 inches of oil to 370°F. Toss the tails with the flour and shake in a colander to discard any excess. Toss into the fritter batter. Using a fork, lift successively 10 crayfish tails out of the batter and drop into the hot oil. Deep-fry until golden. Serve on cr
