My children were raised on a lot of these stir-fries, the colors of the vegetables usually “selling” the dish to them. If the total preparation of the vegetables takes up too much of your time, use whatever vegetables you can find already peeled and trimmed offered for sale fresh—not frozen—in plastic bags and slice them. For the seasonings, follow your own preferences.
