Ingredients

  • 3 pounds fully cleaned baby squid bodies
  • Unbleached all-purpose flour as needed
  • Pure olive oil for deep-frying

Method

Make sure that the beak and other elements have been removed from the squid heads and that the bodies are totally empty of any material. Slip off any traces of gray skin. Leave the tentacles attached to the lower part of the head. Cut the bodies into rings ¼ inch wide. Pat the squid dry and divide into six portions.
