A confipote is a modern French preparation which is half preserve (confiture in French) and half a traditional compote of mixed fruit. Use either sun-ripened tomatoes or canned stewed tomatoes seasoned with a bit of sugar. For use of the duck cutlets, see the sections on grilled and panfried meats. You may remove the thigh bone before serving; it pulls out easily.
