This recipe is from my aunt Claire Robert, a native of the French département of Indre-et-Loire. Rillettes are a specialty of the Loire Valley and its surrounding regions. They are very ancient, and in this region probably originated at the hearths of the troglodyte dwellings along the Loire and its tributaries.
