Muscovy Magret

Buy the magret from a butcher who will know where to order it for you. IMPS numbers do not exist for these birds which have only recently become popular. You can either cook the magret exactly as described for the London broil above, or you can use this recipe, which comes from the French Landes, south of the wine country around Bordeaux. As a vegetable, consider a mixed ragout of mushrooms.
